Facts and fiction about meat?

Thousands of blogs and webpages are written about food and the preparation thereof, but trying to find information about meat seems to be scarce. We often see recipes published with cuts of meat, whose quality well overshoot the cooking method used, like using expensive cuts, which only require a short time on the BBQ for braising and stewing or in the example of “Steak Tartar” using beef tenderloin if a nicely trimmed Sirloin tip will give the same results for about 1/3 the price.

Do you know when buying boneless skinless chicken breasts, the little byline “enhanced with broth” can actually mean that you are paying for up to 15% of added water. Please, if we want to spend our money for 100% of the meat and get only 85% with the rest added from the water faucet let’s go for it but hey it is a lot juicier. Looking up enhance at dictionary.com they list 2 meanings

  1. to raise to a higher degree; intensify; magnify: The candelight enhanced her beauty.
  2. to raise the value or price of: Rarity enhances the worth of old coins.

so enhancing in this case would mean, that it increases the profits for the manufacturer.
